For reservations that are over 31 days you can edit the quote before sending it to the traveler. To remove the taxes you would click on edit on the quote line (below the message box) and de-select the tax radio button (check box). Make sure you save the quote and add/edit the message (if you wish), then send. 1) Be glad it's not the other way around and not charging tax for most of your rentals... like they're messing up right now in Texas.
2) Look into your state rental laws to make sure there's not suddenly a tenant/resident assumption because the guest is staying longer than usual. The number of days is likely going to be defined by the state legislature.
